Easy Quick Basic Hummus

This recipe is intended to be switched up on the fly. Warning: this is not a traditional hummus recipe. It’s  Americanized, but it’s tasty.

Easy Quick Basic Hummus

Ingredients

  • 1 can chickpeas (also known as garbanzo beans), liquid reserved
  • 1/4 cup tahini (sesame paste)
  • 1/8 cup robust extra-virgin olive oil
  • 1 clove garlic, peeled, or more to taste
  • Salt to taste
  • Juice of 1 lemon
  • 1 tablespoon paprika for garnish
  • Chopped fresh parsley leaves for garnish

Instructions

  1. Put everything except the paprika and parsley in a food processor and begin to process. You may have to pulse until it gathers together, and/or use a rubber spatula to scrap down the sides. Add the chickpea liquid or other liquid (see below) as needed to allow your machine to produce a smooth puree.
  2. Taste and adjust with stir-ins below.
  3. Red Pepper: Roast one red bell pepper over a fire, or in the oven, or even just in a cast iron pan, rolling it around until it's pretty much charred on all sides. Drop that hot pepper into a paper bag and roll it closed. In a few minutes you'll find the thin charred outer skin will easily peel away leaving perfectly roasted pepper flesh. Seed the pepper and then you can either dice it very fine and stir it into your basic hummus, or you can blend it in making a lovely reddish mixture.
  4. Olive: Add pitted Kalamata or black olives. If they are packed in oil, you can use some of that oil in place of olive oil in the basic hummus recipe.
  5. Sun Dried Tomato: Finely dice some canned sun dried tomato and stir into the basic hummus or blend up. If the tomato is packed in oil you can use some of that in place of the olive oil in the original basic recipe.
  6. Spicy: You know how I like to spice things up. Roast a jalapeno just like the red pepper directions above, and dice it fine. I don't recommend blending this into your entire batch. Just stir it in. The little bursts of pain will be tempered by the smooth basic hummus.
  7. You can add other liquids instead of all that oil. I like to pour in pickle juice!
  8. A looser mixture of the basic hummus can be used in place of mayonnaise in any recipe.
