Now what’s behind door number twelve…?
This is without a doubt one of my all-time favorite recipes. Pecans and walnuts, which are usually the filling for a pie like this, always have an unpleasantly bitter aftertaste. They’re also not safe for those with tree nut allergies and are usually processed in factories that also process peanuts. Sunflowers make for a good, safe alternative and they have a much smoother, sweeter flavor to me without any bitterness.
The only change I make to this recipe when I make a sunflower seed pie is that I use all light corn syrup, rather than half light and half dark. I like it that way because it lets more of the sunflower flavor shine through.
